Rabbit, snails and Spanish rice
This dish is based, somewhat loosely, on one of the classic, Valencian paellas. Traditionally the rice, meat and vegetables would be cooked in a wide, two-handled paella pan, and the snails would be left in their shells. Other Spanish rice dishes are cooked in pots, similar to the way that Italians make risotto, and this is more like one of those. You can actually make this dish with risotto rice if the paella rice is hard to come by.
You can braise and pick a whole rabbit for this dish or, alternatively, use picked rabbit meat left over from another meal; it is a great way to use leftovers. It also works well with confited or bottled rabbit meat (see here for instructions on how to make this).
